At Apple Republic, flavour starts at the source. Growing up savouring apples picked straight from the tree, owner Tim set out to capture that same pure, orchard‑fresh taste in every scoop. After honing his craft at Gelato University in Italy, he returned home to the heart of the Goulburn Valley - where world‑class fruit is part of the landscape.

Working directly with local growers such as Plunkett Orchards, Tim transforms apples, pears, apricots and peaches - picked at their peak - into silky, small‑batch gelato. Each batch celebrates the incredible produce of Shepparton and the Goulburn Valley, offering a true paddock‑to‑cone experience.

Paired with expertly brewed coffee and a warm, welcoming space, Apple Republic is a delicious tribute to the region’s flavours, crafted with passion and served with pride.
